Happy Sunday! I am posting my week’s menu a day early because we are heading out for a camping trip. I will be back here on Wednesday!
It has finally gotten a bit cooler here. Cool enough for making bread. These loaves are an oatmeal, wheat made with milk not water. It came out very good.
I discovered that I can use my baking stone for cooking quesadillas. Lay out the tortillas on the stone, top with beans, chicken, and cheese, cover with another tortilla and stick the stone in the oven. I broil them for a few minutes until the cheese is melted. Yum!
Here is my menu for the week.
Monday: Hot dogs, beans, chips and smores!
Tuesday: Tomatoes, peppers, garlic, onions and basil over spaghetti
Wednesday: Baked chicken, roasted red potatoes, and carrots
Thursday: Stuffed Zucchini
Friday: Home made pizza
Saturday: Fish, rice, and cabbage, onions, and summer squash
Sunday: Roast in dutch oven with potatoes and onions with a salad
Everything looks delicious. I hope you enjoy your camping trip. We are getting some cooler days here! Autumn is my most favorite time of the year.
Oh a baking stone… I still have not purchased one yet. I need too and those quesadillas look amazing… yum!
